Cauliflower & Broccoli Pancakes

3 cups Woodstock Frozen Organic Cauliflower & Broccoli Mix*, steamed and chopped into pieces 
¾ small onion, minced 
1 Tbsp. all-purpose flour 
3 eggs, beaten 
Salt & pepper to taste 
Canola oil to coat skillet


Beat together eggs and flour

Add onion, cauliflower & broccoli mix*, and salt and pepper to taste

Using a ladle, drop 2 Tbsp. liquid mixture onto pre-heated, greased skillet

Brown on each side and until cooked through

Total cook time is approximately 7 minutes

*Substitute Woodstock Frozen Organic Cauliflower, if desired
