Coconut Snowmen Cookies

Makes 4 snowmen (3 “snow” balls high)
To Build Snowmen
½ cup flour
¼ tsp. baking powder
¾ cup sugar
2 Tbsp. unsalted butter
⅓ cup sour cream
1 large egg white
½ tsp. vanilla
4 cups Woodstock Shredded Coconut
Mini chocolate chips, other baking candies (for eyes, mouth, buttons)


Preheat oven to 325 degrees.
Sift together flour and baking powder. In a separate large bowl, cream sugar and butter. To this, add sour cream, egg white, and vanilla. Add flour mixture to wet mixture and mix well. Stir in the shredded coconut. Form into small, medium, and large balls (medium size ball is about the size of a golf ball) and drop onto a Silpat or greased parchment paper (a greased cookie sheet works fine, too). Before baking, press in mini chocolate chips and/or other small baking candies for eyes, mouth, and buttons.
Bake at 325 degrees for 18-22 minutes, or until the coconut starts to brown. When cookies have cooled, use toothpicks to stack them together to form a snowman.
To Create Little Snowmen Hats
Large marshmallows
Thin, round, chocolate wafer cookies
Milk chocolate chips
Place wafer cookies on wax paper. Melt a handful of the milk chocolate chips. Smear some of the melted chocolate on the bottom of a marshmallow and stick it down in the center of a wafer cookie (melted chocolate works as “glue”). Give it a minute or two to set, then drizzle melted chocolate over top of marshmallow and spread down sides and onto “brim” of hat (wafer cookie), as if you were frosting a cake.
Adhere hat to cooled snowman’s head with a bit of melted chocolate. Decorate finished snowmen with ribbon for scarves.
