Cherry Crisp

Ingredients

Topping:

  • 1 ½ cup WOODSTOCK Organic Traditional Rolled Oats
  • ⅔ cup WOODSTOCK Organic Chopped Pecans
  • ⅓ cup maple syrup
  • ¼ cup melted coconut oil
  • ¼ cup WOODSTOCK Organic Brown Sugar
  • ¼ cup all purpose flour
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon salt

Filling:

  • 6 cups WOODSTOCK Frozen Organic Dark Sweet Cherries 
  • ¼ cup maple syrup
  • ¼ cup WOODSTOCK Organic Brown Sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt

Directions

  1. Preheat oven to 350˚F.
  2. Add all topping ingredients to a large mixing bowl and stir well until combined.
  3. Add all the filling ingredients to a separate large bowl and stir until fruit is well coated.
  4. Transfer the filling to a 9-inch pie tin or cast-iron skillet. Cover filling with crisp topping in an even layer.
  5. Bake for 40-45 minutes, until topping is golden brown and crispy.
