Earth Day Salad

Ingredients

  • 6 cups arugula (or another salad green)
  • 2 cups blueberries and/or blackberries
  • ½ cup WOODSTOCK Pumpkin Seeds
  • ½ cup crumbled feta cheese

For vinaigrette:

  • ⅓ cup olive oil 
  • 1 tablespoon WOODSTOCK Dijon Mustard
  • 2 tablespoons white wine vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

Directions

  1. Whisk together all ingredients for vinaigrette. 
  2. Assemble salad ingredients in a large bowl and toss in vinaigrette before serving.
